We used lockdown and planning for reopening to review the ingredients and dishes that have been most popular with our customers, before and since we won our Michelin Star.
We kept in touch with our favourite individual farm/artisan suppliers so we could plan around what they knew they would have for us over Summer, after an extraordinarily difficult year for them and for all of us. It is times like these where we see at first hand the value of long relationships and ones specially chosen for their shared values.
This enabled us to plan our Summer menus around a combination of customer favourites and practical issues of what is most reliably available, fresh, freshly harvested and freshly in, with no compromises on our standards and vision of how we do things.
The a la carte menu includes vegetarian choices. For the tasting menu we enjoy creating a vegetarian tasting menu on request on booking.
As we always have a wonderful selection in the pantry of fresh vegetables, herbs, leaves, berries, fruits, often picked that morning, and preserves made over the seasons, we know we can put together a delicious and adventurous vegetarian tasting menu.
Indeed, with the growing interest in vegetables, our vegetarian dishes are often requested by diners who usually enjoy meat and fish.
