PRESERVED LEMON, PETERSHAM WILD DAMSONS, HAWTHORN AND LIQUORICE ROOT ICE

This will provide at least 16 portions as a plate cleanser

Ingredients:

  • 1 lemon preserved in a tablespoon of sea salt , taken from a batch that includes a touch of Cubeb pepper, long pepper, cinnamon, star anise
  • Juice of a fresh lemon
  • 200g fresh wild damson purée
  • 5g hawthorn berries
  • ½ fresh liquorice root
  • 120g coconut blossom nectar
  • 400 ml water
