  • seasonality implicit for flavour, ringing the changes, proper husbandry and respect for sustainability

Cooked simply, with balance and restraint, to allow the natural flavours to sing for themselves

For much of the year a nature-board of the vegetables and herbs brought in on the day, grown for us locally, or wild food foraged, is shown at the table, beautiful to look at, with their rich colours and with encouragement to taste the herbs, flowers, leaves and raw vegetables
