We very much hope to welcome you to The Dysart Petersham for this special evening in partnership with Marchesi Antinori — one of Italy’s most historic and influential wine families. It is a privilege to host Allegra Antinori, who represents the 26th generation of her family and plays a leading role in the business today. Actively involved in both the commercial and creative direction of the estates, she is closely connected to the development and expression of Antinori wines across their Tuscan and Umbrian holdings, continuing a legacy that balances tradition with thoughtful innovation.
With a winemaking history spanning over six centuries, the Antinori family has played a defining role in shaping modern Italian wine, balancing deep-rooted tradition with a spirit of innovation. This evening offers a journey across some of their most significant estates, each wine expressing a distinct sense of place and style.
We begin with Tenuta Montenisa Cuvée Royale Franciacorta NV, a wine of precision and elegance, whose fine mousse and freshness provide a natural introduction. From the Tuscan coast, Vermentino di Bolgheri from Guado al Tasso 2024 captures a brighter, more aromatic expression, shaped by its proximity to the sea.
The wines then move into greater depth and structure with Cont’Ugo Merlot 2022, offering richness and suppleness, before arriving at Tignanello 2021 — a wine that remains emblematic of Antinori’s pioneering approach and a benchmark for modern Italian winemaking.
To conclude, Muffato della Sala 2023 from Castello della Sala provides a refined and balanced sweetness – the perfect way to finish!
Each wine has been carefully paired with a dish from our kitchen, with the intention of creating a sense of balance and continuity throughout the menu. We felt very lucky tasting all these wonderful wines in order to plan the dinner!
